The "Chennai Cooler" Smoothie

Ingredients:
1 cup fresh coconut water (from a tender coconut is best)
½ ripe banana, fresh (not frozen)
½ cup fresh cucumber, peeled and chopped
A handful of fresh mint leaves
1 tablespoon chia seeds
A small piece of ginger - peeled
A squeeze of fresh lime juice
(Optional) ½ teaspoon jaggery or a single date for a touch of sweetness
Instructions:
Prepare the ingredients: Place the fresh coconut water, banana, cucumber, mint leaves, and a small piece of peeled ginger into a blender.
Add the seeds and sweetener: Add the chia seeds and your choice of sweetener (jaggery or date) if you're using it.
Blend: Blend on high until the mixture is completely smooth and creamy.
Taste and Adjust: Squeeze in a little fresh lime juice and give it a quick taste. Adjust the sweetness or lime as needed.
